Mediterranean fish with wine

Ingredients
  

  • 400 g potato
  • 675 g white fish fillet skinned and cut into 4 pieces
  • 250 ml white wine
  • 12 cherry tomato [cut in half]
  • 2 garlic clove [finely chopped]
  • 1/2 cup fresh basil [finely chopped]
  • 2 teaspoons butter
  • 4 teaspoons olive oil [cooking type]

Instructions
 

  • Peal the potatoes and cut into cubes. Boil in salted water for approx. 20 min or till tender.
  • Meanwhile - cut the cherry tomatoes in half and chop the garlic finely.
  • Pat dry the fish with paper towelling or clean cloth (important with fish). Sprinkle the fish with salt, dried basil and pepper. Rub the fish with a little olive oil all over and set aside.
  • 7 min or so before the potatoes are ready heat a non-stick pan with oil and roast the tomatoes for a few minutes (2/3min), till the skin starts to colour. Now add the garlic and the fish and fry for 1min.
  • Add the wine and cook until the alcohol is starting to evaporate and the fish is flaky (approx. 3 min) add the butter and turn off heat, add the basil leaves and serve with boiled potatoes.

Notes

This fish dish is great with rice too, so replace the starch if you have some leftover - will save a lot of time on this dish. If you are making potatoes, you will have time to make some veggies or a salad if you wish while you wait for the potatoes to boil.
