Beef Suffed with Mushrooms and Baby Spinach

This deceivingly difficult dish is simple to make and yet looks spectacular.

Ingredients
  

  • 4 tendorised steak [large]
  • 2 tbsp butter
  • 4 spring onion [chopped]
  • 8 button mushrooms [sliced]
  • 2 cup baby spinach
  • foil
  • salt
  • pepper

Sweet Potato and Ginger Mash

  • 4 sweet potato
  • 2 tbsp sour cream
  • 1 tbsp fresh ginger [crushed or finely grated]

Instructions
 

  • Preheat oven to 200°C.
  • Peal and cook sweet potatoes in salted water till soft. Appox. 25min.
  • Pound the steak with a mallet or roll with a rolling pin/bottle to make a thin steak. Season with salt and pepper. Get a pieces of foil for each steak ready, needs to be bigger than the steak pieces, set aside.
  • Place a flew leaves of baby spinach, sliced mushrooms and spring onions in the middle of each steak . Roll up tightly and wrap each roll in foil. Place in the pre-heated oven for 12 - 15 minutes. Remove from oven and fry with a little butter and rosemary in a pan to brown.
  • Once the sweet potatoes are cooked, mash them and add the rest of the mash ingredients. Season with salt, pepper and a pinch of sugar.
  • Carve the meat, serving as medallions with sweet potato mash and vegetables of your choice. Finish off your masterpiece with a drizzle of butter with rosemary.

Notes

While the steak is cooking in the oven, why not make a salad with baby spinach and whatever salad ingredients you have in the fridge.
