Beef Kofte with yoghurt-mint dip

Ingredients
  

Beef Kofte with yoghurt-mint dip

  • 700 g beef mince [90% lean]
  • 1/3 cup fresh mint
  • 1/2 onion [finely chopped]
  • 3 garlic clove [minced]
  • 4 teaspoons paprika
  • 2 teaspoons cumin (ground)
  • 2 teaspoons kosher salt
  • 2 ml black pepper [ground]
  • 2 ml cayenne pepper
  • 400 g potato

Yoghurt Mint Dip

  • 250 ml double thick yoghurt [plain yoghurt]
  • 4 tablespoons fresh mint [finely chopped]
  • 2 tablespoons lemon juice
  • black pepper [to taste]
  • salt [to taste]
  • 1 tsp honey [or less - to taste]

Instructions
 

  • Cut potatoes into quarters (keep the skins on - they are very healthy), and boil till soft. Drain and add a little butter, salt and yoghurt into the potatoes. Mash.
  • Meanwhile. Pre-heat the oven to grill or maximum heat 240C.
  • Gently mix the beef and all the Kofte ingredients in a large bowl. Using moistened hands to help prevent the mixture from sticking, roll about 2 Tablespoons of meat mixture at a time into oblong shapes. Place on a baking sheet, on an oven tray and place in the fridge until ready to grill. Preheat an outdoor grill/braai (see Kitchen Note). Spray the kofte with a non-stick cooking spray and arrange on the grill over a medium high heat. Cook for 15 minutes, turning every 3 minutes or so.
  • Mix all dip ingredients together and season well. Refrigerate until ready to use.
  • Place your tray of Beef Kofte under the grill for approx. 6 min on either side or until desired doneness.
  • Serve Beef Kofte with mint dip and mashed potatoes.

Notes

This recipe is great for entertaining guests. Serve Koftas with the mint dip, get some crisps and crudités and you are ready for a party.
