Butternut and Potato Bake

The addition of Butternut to a typical Potato bake makes this a delicious alternative.

Ingredients
  

  • 1 butternut pealed and sliced (2cm thick)
  • 4 potato pealed and sliced (2cm thick)
  • 250 ml cream
  • 125 ml milk

Instructions
 

  • Boil the butternut and potato slices in salted water for 15 min. They must still be a bit hard.
  • Drain the slices and place in a oven proof dish. Season with salt and pepper.
  • Mix together the cream and the milk, pour over the potatoes and butternut, cover and bake for 30 minutes.
  • Remove the lid and bake uncovered for another 15 minutes. The potatoes and butternut must be falling apart by now and the sauce should thicken, the edges could go a bit brown. Serve warm.
