Butternut Crumpets

Super simple yet delicious crumpets

Ingredients
  

  • 500 g butternut pealed, diced
  • 1 cup cornflour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 2 eggs beaten
  • salt to taste
  • sunflower oil for frying

Instructions
 

  • Cook the butternut in salted water until soft, mash.
  • Sift all dry ingredients together, add to the butternut. Add the beaten eggs and combine.
  • Fry mixture, a large spoon full per crumpet, in hot oil till the crumpets start to bubble, turn to the other side and fry till golden brown.
  • Serve with syrup, honey, marmalade or cinnamon and sugar.

Notes

You could use leftover mashed butternut for this recipe in stead of cooking the butternut from raw.
