Butternut Crumpets
Super simple yet delicious crumpets
Ingredients
- 500 g butternut pealed, diced
- 1 cup cornflour
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 2 eggs beaten
- salt to taste
- sunflower oil for frying
Instructions
- Cook the butternut in salted water until soft, mash.
- Sift all dry ingredients together, add to the butternut. Add the beaten eggs and combine.
- Fry mixture, a large spoon full per crumpet, in hot oil till the crumpets start to bubble, turn to the other side and fry till golden brown.
- Serve with syrup, honey, marmalade or cinnamon and sugar.
Notes
You could use leftover mashed butternut for this recipe in stead of cooking the butternut from raw.
