Chicken banting style
Ingredients
- 4 chicken breasts [boneless and skinless]
- 1 teaspoon olive oil
- 2 avocados [peeled, pitted and sliced]
- 2 tomatoes (regular) sliced
- 100 g cheese [cut into slices]
- 1 onion [sliced]
- 4 ciabatta rolls [optional]
Instructions
- Preheat oven to 190 degrees C
- Warm oil in a pan, add chicken and onion. Cook on medium to low heat for approx. 10 minutes or until chicken is browned and almost done - but not entirely. Add salt and pepper to taste.
- Place chicken on wax paper and top each breast with onion, 1 to 2 slices of tomato and 2 to 3 slices of cheese. Place in oven for 10 to 15 minutes, until cheese melts.
- Remove from oven, add 2 to 3 slices of avocado on top of each breast, and serve immediately.
- If you not watching the carbs - put the whole lot in a ciabatta roll and enjoy an awesome sandwich.
