Croquettes

Croquettes are inexpensive, filling and a very tasty dish that you can vary easily with different fillings to make it your own family recipe. We tasted Croquettes while visiting Italy and we vowed to try to make to make them on our return home. Its 2 years later, but better late then ever.

Ingredients
  

  • 2 cups jasmine rice
  • 4 egg beaten
  • 50 g butter
  • 150 g bread crumbs
  • 500 ml oil for frying
  • 60 g Parmesan cheese
  • 100 g gouda cheese cut into cubes
  • 100 g ham cut into cubes

Instructions
 

  • Boil rice on low heat in 1 liter of salty water for about 15min.
  • Add 1/2 the beaten eggs, butter and Parmesan cheese into the warm rice. Mix well and cool down.
  • Slightly dampen your hands, put some of the rice compoud into hand and flatten into palm. Stuff with a 2 cubes of cheese and ham. Form into a ball, size of approx. tennis ball.
  • When done, dip each ball in rest of beaten egg and roll in the bread crumbs. Fry in heated oil till golden brown. Server with a salad of choice.

Notes

You could add different fillings such as mushrooms or bolognese sauce, or serve with a tomato based sauce.
