Deconstructed Lemon Tart

Ingredients
  

  • 1/2 cup cream
  • 1 tsp vanilla essence
  • 1 tbsp sugar
  • 200 g biscuits [buttery biscuits eg. Gluten Free Sin biscuits]
  • 50 g dark chocolate [grated - optional]

Lemon curd:

  • 2 egg
  • 80 g caster sugar
  • 75 g butter [softened]
  • 1/2 lemon [finely zested]
  • 80 ml lemon juice

Instructions
 

For the pastry

  • Place eggs and sugar in a bowl and whisk well. Place bowl over saucepan of simmering water and whisk in remaining ingredients. Cook, whisking until thickened. Remove bowl from heat.
  • Allow curd to cool slightly then pour into glasses and let them cool for 20-30 minutes in the fridge.

Cream

  • Meanwhile Beat cream, sugar and vanilla essence till soft peaks form - best done in a metal bowl.
  • Assemble dessert: Remove glasses from fridge, crumble a generous amount of the biscuits over the lemon curd. Place a generous amount of the cream on top of the crumb and then grate dark chocolate on top. Serve with black filtered coffee.

Notes

Use biscuits that are soft and crumb easily. They need to dissolve easily with each mouthful.
