Fish Green Curry – simple

This simple green curry recipe is delicious, you could replace the vegetables with any other ones of your choice. Prawns can be used for this recipe or chicken breasts.

Ingredients
  

  • 800 g white fish fillet eg. kingklip, hake
  • 600 ml coconut milk
  • 4 lime leaf
  • 1 tbsp green curry paste
  • salt to taste
  • 1 tsp sugar
  • 100 g carrot thinly sliced
  • 100 g green bean thinly sliced
  • 100 g spinach leaves only - optional
  • fresh basil optional
  • 2 cup basmati rice optional

Instructions
 

  • Cook Rice according to packaging instructions (optional).
  • Pour coconut milk into a saucepan. Add kaffir lime leaves, stir in green curry paste and sugar. Simmer until the paste dissolves into a coconut sauce.
  • Add carrots and cook for 4 minutes.
  • Add fish and green beans, cook for appox. 8 min, or till fish is flaking off. Add spinach, cook till it wilts (approx 2min). Adjust the seasoning, if necessary, the paste already contains salt. Garnish with chopped Basil - optional.
  • Serve immediately. Recommended with Jasmine Rice.
