Garlic Mushrooms on Couscous

This simple dish can look spectacular when presented right. Try plating up as per picture and impress your family and friends.

Ingredients
  

  • 4 giant brown mushroom [or use 2 or 3 medium sized ones]
  • 2 tsp garlic clove [minced]
  • 4 tsp butter
  • 1 cup wholewheat coescoes
  • 1 tsp chicken stock powder
  • lemon [cut into wedges]
  • 12 cherry tomato [cutt into 6th]
  • 2 tbsp fresh chives [chopped]
  • 1 cup baby spinach [shredded]
  • foil

Dressing

  • 2 tbsp balsamic vinegar
  • 1 tsp dijon mustard
  • 80 ml olive oil [use a good quality olive oil]
  • 1/5 tsp garlic clove [crushed - just a tiny amount]
  • salt [to taste]
  • pepper [to taste]

Instructions
 

  • Pre-heat oven to 200C.
  • Oil a baking tray, place the mushrooms on the trays. Fill each with a little crushed garlic, a dollop of butter and a drizzle of olive oil. Season with salt and pepper and a few drops of balsamic vinegar into each mushroom.
  • Place into the pre-heated oven, covered with a sheet of foil for approx. 10 minutes.
  • Meanwhile make couscous: Place couscous with stock into a bowl. Pour boiling water to just cover the top a tiny bit. Cover with a plate/lid. Set aside for 10 minutes. Fluff up with a fork.
  • Make the dressing: Using a small whisk: Mix balsamic and mustard, Add the oil a little at a time and mix well. Season with salt and pepper.
  • Assemble the dish: Place some couscous on each plate. Place mushroom on top of the couscous, then shredded baby spinach. Pour dressing around the couscous in one long motion and some on top of the mushroom. place tomato wedges around the couscous and sprinkle with chives. Season with salt and pepper and serve immediately with lemon wedges (each to decide how tangy they like their food).

Notes

Alternative: You could also sprinkle some parmesan on top of this dish or sprinkle cheese on top of the mushrooms when baking and let the cheese melt.
