Halloumi and Chicken Salad

Ingredients
  

  • 260 g haloumi cheese plain or herbed
  • 260 g chicken breast
  • 1 tomato (regular)
  • 50 g lettuce leaves mixed bunch
  • 2 tbsp sunflower seeds or mixed seeds

Dressing

  • 2 tsp honey or xylitol
  • 1 tbsp soy sauce
  • 1 tsp Sesame oil
  • 2 tbsp olive oil

Instructions
 

  • Slice the haloumi cheese and chicken breasts. Cut tomatoes into small wedges and set aside.
  • Fry haloumi on a non-stick frying pan till golden brown or crispy. Remove from pan and place on paper toweling to absorb the oil.
  • Fry chicken breast slices in the same pan, adding a little butter if necessary. Season with salt and pepper.
  • Remove chicken from pan and set aside. Add the sunflower seeds into the same pan and toast for a few seconds or till beginning to change colour. Remove from heat and set aside.
  • Make the dressing: combine dressing ingredients well.
  • Assemble the salad: Place lettuce leaves on a serving platter, scatter, tomato pieces on top. Scatter the halloumi cheese and chicken slices on top of the lettuce and tomato. Sprinkle with the toasted sunflower seeds and drizzle on the dressing. Serve immediately.

Notes

You could also add some cucumber to the salad.
