Ingredients

  • 1 litre milk [full cream]
  • 1 can condensed milk
  • 1 tablespoons butter
  • 80 ml maizena
  • 2 egg
  • 1 teaspoons vanilla essence
  • 1 packet tennis biscuits
  • ground cinnamon

Instructions

  • Place milk, condensed milk and butter into a microwave proof dish and microwave on high for 5 minutes.
  • In the meantime: combine 2 eggs, corn flour and vanilla essence and whisk together for 2min until well combined.
  • Line a square/rectangular dish with half the tennis biscuits so it covers the base.
  • Take out the hot milk after 5 min and stir (dissolving the condensed milk in the bowl). Add the egg mixture to the hot milk mixture and stir.
  • Put back into microwave for 6 min, take out and mix with a whisk, back for 3 min and whisk, back for 1 min and whisk. Should look like thick custard otherwise put in for a little longer.
  • Pour half of the hot custard like mixture over tennis biscuits. Line a second layer of biscuits on top of custard and pour in the rest of the mixture. Sprinkle with cinnamon and refrigerate for at least 3hours.

Notes

Typical tarts have crushed biscuits as a base. This alternative is much quicker and less fatty, but most important works just as well.
