Mince & Eggplant Curry
Ingredients
- 500 g beef mince
- 400 g eggplant [skin removed]
- 2 tbsp olive oil
- 1 onion [diced]
- 1 tsp fresh ginger [crushed]
- 1 tsp garlic clove [crushed]
- 2 green chilli [deseeded & finely sliced]
- 4 tomato (regular) [skin removed - chopped]
- 1 cup Hot water
- 300 g jasmine rice
Spices for the recipe
- 1 tsp garam masala
- 3-4 clove
- 1 cinnamon stick
- 1 tsp coriander (ground)
- 1/2 tsp cumin seeds
Instructions
- Prepare rice according to packaging instructions.
- Heat the oil in a pan ; sauté the onions on medium heat until they are soft.
- Add the ginger, garlic, cumin and coriander seeds and fry for another 1 minute. Add the cinnamon, cloves, and stir in green chillies. Fry for another 1-2 minutes. Remove from pan and keep warm.
- Add the mince to the same pan, and fry till it is well browned. Meanwhile, grate the eggplant and add to the mince, along with the garam masala powder,
- Return the onion mixture to the pan and add the tomatoes and water. Cover and simmer for approximately 15 min.
