Basil Fish with Cauliflower Medley
Ingredients
For the fish
- 4 white fish fillet [about 200g each]
- 20 g plain flour [for dusting]
- 15 ml olive oil [1tbsp]
- lemon [cut into wedges for serving]
For cauliflower medley
- 125 g bacon (rindless) [chopped]
- 1/4 cup mixed nuts [roughly chopped]
- 3 garlic clove [crushed]
- 1/3 cup fresh parsley [chopped]
- 15 ml olive oil [to serve]
- 800 g cauliflower [cut into florets]
- 1 tablespoon cooking oil
For the sauce
- 30 g fresh basil [leaves only]
- 125 ml olive oil
Instructions
- First, make the basil sauce: Bring a small saucepan of water to the boil and have a bowl of ice-cold water ready nearby. Add the basil leaves to the boiling water and blanch for 15 seconds. Remove and immediately plunge into the ice-cold water. Dry on paper towel, then place in a blender or food processor. Add the oil and some salt and pepper, then blend together. Set aside.
- Boil, steam or microwave cauliflower until just tender. Drain and place in a large bowl.
- Meanwhile, pat the fish fillets dry. Add seasoning to the flour and dust the fillets in the seasoned flour.
- Add oil to a pan and fry bacon on high heat for approx. 4 mins or till crisp. Reduce heat to medium, add garlic and nuts and cook for another 1 min - until fragrant. Remove from pan and add to the cauliflower bowl.
- Now add the fish to the same pan and sear for 3-4 minutes each side (add a little more oil if required). If the fillets are quite thick, cook for longer. Alternatively, cook the fish on the braai or grill in oven with a little oil, salt and pepper.
- Meanwhile the mix cauliflower, garlic, hazelnuts. Add the parsley and toss to combine. Season well. Drizzle with oil before serving.
- Arrange the fish on individual serving plates and drizzle over the basil sauce. Serve with lemon wedges and cauliflower medley.
Notes
Leftover basil sauce idea:
If you find you have a lot of the basil sauce left over - reserve and cook some pasta for lunch the next day - halve and roast some cherry tomatoes in the pan with a little oil, add your basil sauce, check the seasoning and server with hot pasta.
