Pea and Baby Marrow Salad

Ingredients
  

  • 1 tbsp lemon juice
  • 1 tsp olive oil
  • 1 tbsp honey
  • 1/2 cup frozen peas blanched and cooled
  • 80 g feta cheese
  • 2 spring onion sprigs
  • 1/4 cup fresh mint leaves only
  • 2 baby marrow

Instructions
 

  • Blanch peas for 3 min. or till just defrosted, drain and cool.
  • Use a peeler to slice the baby marrows into strips. Grill them (on a griddle pan if possible) for a minute on each side.
  • Toss together the lemon juice, olive oil and honey with the grilled baby marrow strips.
  • Add the blanched peas, feta, spring onions and mint leaves. Toss gently and serve.

Notes

This salad is great served with fish.
