Pea and Baby Marrow Salad
Ingredients
- 1 tbsp lemon juice
- 1 tsp olive oil
- 1 tbsp honey
- 1/2 cup frozen peas blanched and cooled
- 80 g feta cheese
- 2 spring onion sprigs
- 1/4 cup fresh mint leaves only
- 2 baby marrow
Instructions
- Blanch peas for 3 min. or till just defrosted, drain and cool.
- Use a peeler to slice the baby marrows into strips. Grill them (on a griddle pan if possible) for a minute on each side.
- Toss together the lemon juice, olive oil and honey with the grilled baby marrow strips.
- Add the blanched peas, feta, spring onions and mint leaves. Toss gently and serve.
Notes
This salad is great served with fish.
