Pork stir-fry

With stir fry-veg you could easily substitute the veg in the recipe with a pre-chopped mix and add these in step 4. Woolies has lovely mixes, they a bit pricy but on busy nights it's a great alternative to chopping. Save money by making the sauce and starch yourself.

Ingredients
  

  • 450 g pork [sliced]
  • 1 garlic clove [finely chopped]
  • 1 onion [finely chopped]
  • 6 button mushrooms [thinly sliced]
  • 1 red pepper [thinly sliced]
  • 2 carrot [thinly sliced]
  • 1 tablespoon soy sauce
  • 2 teaspoons cornflour
  • 1 tbsp vegetable oil
  • 150 ml chicken stock

Instructions
 

  • Cut pork into thin slices
  • Mix the chicken stock with the soy sauce. Blend in the corn flour and mix to a smooth paste
  • Heat the oil in a large frying pan. Add the pork and fry until well browned
  • Add the onion, garlic and carrot to the pan and fry for 2 to 3 minutes
  • Then add mushrooms and peppers to pork mixture and continue frying for 2 to 3 minutes
  • Pour the stock mixture into the pan and bring to the boil, stirring all the time.
  • Simmer for 5 minutes
  • Add Salt and Pepper to taste

Notes

Serve with brown rice or noodles
