Pork stir-fry
With stir fry-veg you could easily substitute the veg in the recipe with a pre-chopped mix and add these in step 4. Woolies has lovely mixes, they a bit pricy but on busy nights it's a great alternative to chopping. Save money by making the sauce and starch yourself.
Ingredients
- 450 g pork [sliced]
- 1 garlic clove [finely chopped]
- 1 onion [finely chopped]
- 6 button mushrooms [thinly sliced]
- 1 red pepper [thinly sliced]
- 2 carrot [thinly sliced]
- 1 tablespoon soy sauce
- 2 teaspoons cornflour
- 1 tbsp vegetable oil
- 150 ml chicken stock
Instructions
- Cut pork into thin slices
- Mix the chicken stock with the soy sauce. Blend in the corn flour and mix to a smooth paste
- Heat the oil in a large frying pan. Add the pork and fry until well browned
- Add the onion, garlic and carrot to the pan and fry for 2 to 3 minutes
- Then add mushrooms and peppers to pork mixture and continue frying for 2 to 3 minutes
- Pour the stock mixture into the pan and bring to the boil, stirring all the time.
- Simmer for 5 minutes
- Add Salt and Pepper to taste
Notes
Serve with brown rice or noodles
