Potato Salad with bacon
Ingredients
- 16 baby potatoes halved
- 4 bacon rashes
- 2 tbsp spring onion sliced
Mayo sauce
- 75 ml sour cream
- 75 ml mayonnaise
- 1 tbsp fresh dill finely chopped
- salt and pepper to taste
- 1 tbsp fresh parsley finely chopped
- 1 tbsp dijon mustard
- 4 ml crushed garlic
Instructions
- Boil potatoes in cold water with a little salt till soft but not falling appart. Approx 20min. Cool and halve the potatoes and place in the fridge.
- Meanwhile fry bacon in a non stick pan till crisp. chop roughly and set aside.
- Mix all the sauce ingredients together and check for seasoning. Mix with cold potatoes.
- Sprinkle with bacon bits, spring onion and grind some pepper on top.
Notes
You may need to add a little milk/cream/yoghurt to the mayo sauce if it is too thick.
