Potato Salad with bacon

Ingredients
  

  • 16 baby potatoes halved
  • 4 bacon rashes
  • 2 tbsp spring onion sliced

Mayo sauce

  • 75 ml sour cream
  • 75 ml mayonnaise
  • 1 tbsp fresh dill finely chopped
  • salt and pepper to taste
  • 1 tbsp fresh parsley finely chopped
  • 1 tbsp dijon mustard
  • 4 ml crushed garlic

Instructions
 

  • Boil potatoes in cold water with a little salt till soft but not falling appart. Approx 20min. Cool and halve the potatoes and place in the fridge.
  • Meanwhile fry bacon in a non stick pan till crisp. chop roughly and set aside.
  • Mix all the sauce ingredients together and check for seasoning. Mix with cold potatoes.
  • Sprinkle with bacon bits, spring onion and grind some pepper on top.

Notes

You may need to add a little milk/cream/yoghurt to the mayo sauce if it is too thick.
