Prawns in Coconut Sauce
This is a medium heat curry, add less or more chilli powder depending on your preference.
Ingredients
- 1 kg raw prawn shelled and de-veined
- 60 ml oil
- 1 onion finely chopped
- 1 tbsp crushed garlic
- 2 tsp red chilli powder
- 1 tsp ground cumin
- 1 tsp garam masala
- 2 tsp ground coriander
- 2.5 ml ground turmeric
- 2 tomato (regular) skinned and chopped
- 1 coconut milk can
- 1 tbsp Magic Masala
- salt to taste
- fresh coriander to garnish
- 2 cups basmati rice optional - to serve
Instructions
- Cook rice according to packaging instructions (optional step).
- Heat oil in a pot. Saute onion on a medium heat until golden brown.
- Add red chilli, ground coriander, ground cumin, garam masala, turmeric and garlic. Stir for only a few seconds, taking care not to burn the spices.
- Add tomatoes and cook till they are soft. Add salt to taste.
- Add magic masala and the coconut milk, reduce the heat to slightly. When the sauce begins to boil, add the prawns.
- When the tails of the prawns begin to curl, turn off heat before they curl tightly.
- Serve with Basmati Rice and garnish with fresh coriander.
