Prawns in Coconut Sauce

This is a medium heat curry, add less or more chilli powder depending on your preference.

Ingredients
  

  • 1 kg raw prawn shelled and de-veined
  • 60 ml oil
  • 1 onion finely chopped
  • 1 tbsp crushed garlic
  • 2 tsp red chilli powder
  • 1 tsp ground cumin
  • 1 tsp garam masala
  • 2 tsp ground coriander
  • 2.5 ml ground turmeric
  • 2 tomato (regular) skinned and chopped
  • 1 coconut milk can
  • 1 tbsp Magic Masala
  • salt to taste
  • fresh coriander to garnish
  • 2 cups basmati rice optional - to serve

Instructions
 

  • Cook rice according to packaging instructions (optional step).
  • Heat oil in a pot. Saute onion on a medium heat until golden brown.
  • Add red chilli, ground coriander, ground cumin, garam masala, turmeric and garlic. Stir for only a few seconds, taking care not to burn the spices.
  • Add tomatoes and cook till they are soft. Add salt to taste.
  • Add magic masala and the coconut milk, reduce the heat to slightly. When the sauce begins to boil, add the prawns.
  • When the tails of the prawns begin to curl, turn off heat before they curl tightly.
  • Serve with Basmati Rice and garnish with fresh coriander.
