Cauliflower and Olive Couscous
Ingredients
- 15 ml olive oil
- 1 onion [sliced]
- 1 garlic clove [sliced]
- 20 ml harissa paste [use less for a milder version]
- 500 g cauliflower [ broken into small florets]
- 2 potato [peeled and cut into small chunks/cubes]
- 100 g olives [pitted]
- 45 g raisins
- 5 ml honey
- 15 g fresh coriander [chopped]
- couscous [to serve]
- 500 ml boiling water
Instructions
- Make Couscous according to packaging instructions.
- Heat the olive oil in pan and fry the onion for 5 minutes, add the garlic and harissa paste and fry for another 30-60 seconds. Add the cauliflower, potato, olives and raisins and water.
- Bring to the boil and then simmer until the veg is tender. Stir in the honey, sprinkle on the coriander
- Serve with some couscous.
