Ingredients
  

  • 15 ml olive oil
  • 1 onion [sliced]
  • 1 garlic clove [sliced]
  • 20 ml harissa paste [use less for a milder version]
  • 500 g cauliflower [ broken into small florets]
  • 2 potato [peeled and cut into small chunks/cubes]
  • 100 g olives [pitted]
  • 45 g raisins
  • 5 ml honey
  • 15 g fresh coriander [chopped]
  • couscous [to serve]
  • 500 ml boiling water

Instructions
 

  • Make Couscous according to packaging instructions.
  • Heat the olive oil in pan and fry the onion for 5 minutes, add the garlic and harissa paste and fry for another 30-60 seconds. Add the cauliflower, potato, olives and raisins and water.
  • Bring to the boil and then simmer until the veg is tender. Stir in the honey, sprinkle on the coriander
  • Serve with some couscous.
