Quinoa Fried Rice

Ingredients
  

  • 2 tsp olive oil
  • 1 onion [diced]
  • 4 garlic clove [minced]
  • 10 g fresh ginger [minced]
  • 1/2 cup mixed mushrooms [sliced]
  • 1/2 cup carrot [small dice - or grated]
  • 1/2 cup cabbage [shredded]
  • 1/2 cup red pepper [small dice]
  • 1/2 cup red kidney beans (canned)
  • 1 1/2 cups quinoa
  • 2 teaspoon chilli sauce [or to taste, depending on desired spice]
  • 4 tablespoons soy sauce
  • Sesame oil [for drizzling]
  • 2 tbsp sesame seeds [toasted for garnish]

Instructions
 

  • Cook quinoa according to packaging instructions. (approx. 15min). Meanwhile prepare and measure all the ingredients for easy cooking. 5 minutes before the quinoa is done - start the cooking process.
  • In a wok or sauté pan, heat oil over medium-high heat. Add onion and cook 5 – 7 minutes, or until translucent.
  • Add garlic and ginger and sauté another 3 – 4 minutes.
  • Add mushrooms, carrots, cabbage and red pepper. Sauté 4 – 5 minutes.
  • Add red kidney beans. Sauté 1 minute.
  • Add cooked quinoa, sauté for 3 minutes.
  • Add in chili sauce and soy sauce. Sauté 2 minutes.
  • Drizzle sesame oil and sesame seeds on top for serving.
