Red onion + baby potato bake

This potato dish is great, the cream becomes nice and sweet from the caramelised onions and is a perfect braai accompaniment or a side dish to any roast.

Ingredients
  

  • 600 g baby potatoes
  • 2 onion (red) sliced into rings
  • 30 ml butter
  • 30 ml olive oil
  • salt and pepper
  • 5 ml brown sugar
  • 200 ml cream
  • 60 g grated parmasan optional

Instructions
 

  • Boil the baby potatoes in salted water until just soft - don't overcook them (approx. 15 min). Drain and set aside.
  • Meanwhile: fry onions in the butter and oil until glossy. Add the sugar, salt and pepper, and caramelise for another 10 min on med-low heat.
  • Halve the potatoes, add the caramelised onion and cream.Season with salt and pepper, spoon into an ovenproof dish, sprinkle over the parmesan and bake for 35-40 minutes until golden brown.
