Rice Pudding

Credit to my mom-in law again, Danish rice pudding recipe. They eat it as a main course without the cinnamon and sugar but this is yum for a dessert.

Ingredients
  

  • 1 l milk
  • 1/2 cup Arborio Risotto Rice
  • pinck salt
  • 1 tsp butter
  • ground cinnamon
  • treacle sugar [unrefiend brown sugar- or honey]

Instructions
 

  • Bring milk with the butter to boil in a thick bottomed pot.
  • Add rice gradually stirring all the time.
  • Bring to boil and then reduce to simmer. Simmer for 45min, stir occasionally to prevent burning.
  • Take off heat after 45min and add salt - the milk with thicken ever so slightly. Enjoy with plenty of cinnamon and treacle sugar or honey.

Notes

for a variation, add orange rind when cooking the rice for some extra flavour. You can also add some flaked almonds on top.
