Rice Pudding
Credit to my mom-in law again, Danish rice pudding recipe. They eat it as a main course without the cinnamon and sugar but this is yum for a dessert.
Ingredients
- 1 l milk
- 1/2 cup Arborio Risotto Rice
- pinck salt
- 1 tsp butter
- ground cinnamon
- treacle sugar [unrefiend brown sugar- or honey]
Instructions
- Bring milk with the butter to boil in a thick bottomed pot.
- Add rice gradually stirring all the time.
- Bring to boil and then reduce to simmer. Simmer for 45min, stir occasionally to prevent burning.
- Take off heat after 45min and add salt - the milk with thicken ever so slightly. Enjoy with plenty of cinnamon and treacle sugar or honey.
Notes
for a variation, add orange rind when cooking the rice for some extra flavour. You can also add some flaked almonds on top.
