Roast Chicken: lemon & thyme

Ingredients
  

  • 1 chicken choose for size of family
  • 8 garlic clove
  • 1 onion
  • 2 carrot
  • 1 fresh thyme bunch
  • salt and pepper to taste
  • 60 ml olive oil approx.
  • 6 potato
  • 1 lemon

Instructions
 

  • Pre-heat oven to 185C.
  • Prepare Veggies: Bruise the garlic cloves, peal the carrots and cut into chunks. Wash the potatoes and quarter. Peal the onion and cut into wedges. Wash the thyme and separate into sprigs. Wash the lemon and cut into wedges.
  • Place the chicken together with the veggies into an oven proof dish or pan. Place half the thyme and lemon wedges into the cavity of the chicken, then season liberally with salt and pepper.
  • Top with garlic cloves, remaining thyme and lemon wedges. Drizzle a good amount of olive oil on top and bake in a pre-heated oven for approx. 60 min or till the cooked chicken reads between 75C - 80C on a food thermometer.
