Toasted corn salad
Ingredients
- 320 g sweetcorn kernels
- 4 teaspoons vegetable oil
- 500 ml iceberg lettuce
- 2 tomatoes [chopped into a dice]
- 1/2 cucumber [chopped into a dice]
- 20 olives [we used green pitted olives]
- 4 tablespoons olive oil [extra virgin]
- 2 tablespoons white wine vinegar
Instructions
- Heat a small frying pan over a medium heat. Add vegetable oil and wait for it to heat for approx. 30 sec.
- Add sweetcorn to the pan and fry until the kernels turn lightly golden (approx. 3min). Set aside.
- Meanwhile chop all salad ingredients.
- Assemble salad: Iceberg lettuce, tomatoes, cucumber, olives, toasted sweetcorn.
- Drizzle with olive oil and vinegar and serve immediately.
Notes
Serve with Home-made Hummus. If serving with hummus - make Hummus before starting this salad recipe.
