White Vegetable Lasagne

This is not a typical lasagne, however we found it very tasty, easy and a nice change to the traditional tomato based one.

Ingredients
  

  • 1 tablespoon olive oil
  • 1 onion [chopped]
  • 4 garlic clove [chopped]
  • 500 g frozen mixed vegetables
  • 250 g frozen peas
  • 2 teaspoons lemon zest [finely-grated]
  • 200 ml water
  • 300 ml cream
  • 250 g ricotta cheese
  • 8 sheets lasagna sheet [use gluten free sheets if you gluten intolerant]
  • 1 cup Parmesan cheese [grated or shaved]
  • 200 ml milk

Instructions
 

  • Preheat oven to 220C and lightly oil an ovenproof dish.
  • Boil a pot of water with salt. Add the pasta sheets and cook for 7min. (Pasta must be starting to get soft but not falling apart. (This process helps you to reach your 45min recipe time - otherwise you have to bake the completed lasagne for approx. 40min).
  • Meanwhile: Chop onion. Heat oil in a large frying pan over medium heat. Cook onion for 3 minutes - till onion is soft. Add garlic for 1 min extra.
  • Add frozen vegetables, peas and water. Simmer for 3-4 mins - until thawed. Add cream, lemon zest, and 1/4 amount of the ricotta until combined. Remove from heat.
  • Using the back of a fork, roughly mash vegetables until just squashed. Season.
  • Mix remaining ricotta with milk, set aside.

Assemble the Lasagne

  • Layer 2 sheets of lasagne sheets (for a 4 people recipe) over the base of the dish and spread 1/4 of the ricotta mixture and a 1/3 vegetable mixture over them. Sprinkle with 1/4 amount of the parmesan.
  • Make 2 more layers of lasagne sheets, vegetables and parmesan (do not add the ricotta mixture to these two layers). Top with a final layer of lasagne sheets.
  • Top with the remaining ricotta mixture and sprinkle some parmesan and black pepper on top. Bake for 25 min, until starting to brown on top.

Notes

Make a quick simple salad while the lasagne is baking : such as cherry tomatoes, mixed salad leaves and feta or olives. Whatever you have as leftovers in your fridge this week.  Serve a slice of Lasagne with the salad.
