Wrap Pizza - Bacon and Avo

Super simple, if you prefer a normal pizza base purchase them ready made, get pizza dough at a Spar near you (order ahead of time), or make your own pizza dough if you have a little extra time. Since the pizzas are very thin and light you probably will manage 2 - therefore we ask you to get 8 wraps.

Ingredients
  

  • 400 g mozzarella cheese [grated]
  • 8 wholewheat wrap [20cm- medium]
  • 400 g tomato puree
  • 4 garlic clove [crushed]
  • 200 g bacon [diced]
  • 2 tsp green chilli [finely diced - optional]
  • 2 tsp dried oregano [plus extra for sprinkling]
  • 2 avocado [sliced - only just before serving]
  • 30 g fresh rocket

Instructions
 

  • Pre-heat oven to 220C. Oil the oven tray with a tiny bit of oil - wipe of excess.
  • In a small pot, combine the tomato puree, crushed garlic, oregano and half of the chilli (optional). Heat through on gentle heat - approx. 4 min. Set aside.
  • Fry bacon till it starts to crisp. Set aside.
  • Place 2 or 3 wraps on the oven tray (as many as you can fit) and evenly spread approx. 2 tbsp. of the tomato mixture on each wrap.
  • Sprinkle approx. 50g of the grated cheese on top of each wrap. On top of the cheese, some bacon pieces and sprinkle with more oregano and some chilli if you wish.
  • Place in the middle of the oven for approx. 10min. or till cheese is melted and the sides of the wraps begin to toast.
  • Place cooked pizzas on separate plates and repeat with the other wraps while you finish of the cooked pizzas. To finish the cooked pizzas: place slices of Avocado on top with some rocket leaves. Season with salt and pepper if desired. Enjoy these while the others are baking in the oven. (They great - folded over and eaten like a sandwich).

Notes

We love thin based pizzas, so these wrap based pizzas are great. Light and simple to make.
