Baby marrow Frittata with Lemon Green Beans
We love the zesty green bean accompaniment to this simple frittata recipe.
Ingredients
For the Frittata
- 8 eggs
- 40 ml cold water
- 3 cups baby marrows [grated]
- 50 ml butter [melted]
- 120 g feta cheese [crumbled]
For the Lemon Green Beans
- 400 g green beans [ends trimmed]
- 2 teaspoons olive oil
- 2 tablespoons butter
- 4 garlic cloves
- 1 teaspoon red pepper flakes [reduce if you don't like your food spicy]
- 1 teaspoon lemon zest
Instructions
- Preheat oven to 180°C.
- Beat eggs with cold water.
- Coarsely grate baby marrows. Sauté in some butter and season lightly.
- Heat remaining butter and butter a shallow casserole dish. Place baby marrow and crumbled feta cheese into dish. Season with sea salt and milled black pepper.
- Pour eggs over and bake for 15 minutes, or until light golden brown and just firm. Grill, if desired, to brown top lightly.
The Lemon Green Beans
- While the Frittata is baking blanch green beans in a large pot of well salted boiling water until bright green in colour and tender crisp, roughly 3 minutes.
- Drain and shock in a bowl of ice water to stop from cooking.
- Heat a heavy frying pan over medium heat, add oil and butter. Add garlic and red pepper flakes and sauté until fragrant, about 30 seconds.
- Add the beans and continue to sauté until coated with the butter and heated through, about 5 min. Add lemon zest and salt and pepper.
- Take your frittata out the oven and serve with green beans.
