Baby marrow Frittata with Lemon Green Beans

Ingredients
  

For the Frittata

  • 8 eggs
  • 40 ml cold water
  • 3 cups baby marrows [grated]
  • 50 ml butter [melted]
  • 120 g feta cheese [crumbled]

For the Lemon Green Beans

  • 400 g green beans [ends trimmed]
  • 2 teaspoons olive oil
  • 2 tablespoons butter
  • 4 garlic cloves
  • 1 teaspoon red pepper flakes [reduce if you don't like your food spicy]
  • 1 teaspoon lemon zest

Instructions
 

  • Preheat oven to 180°C.
  • Beat eggs with cold water.
  • Coarsely grate baby marrows. Sauté in some butter and season lightly.
  • Heat remaining butter and butter a shallow casserole dish. Place baby marrow and crumbled feta cheese into dish. Season with sea salt and milled black pepper.
  • Pour eggs over and bake for 15 minutes, or until light golden brown and just firm. Grill, if desired, to brown top lightly.

The Lemon Green Beans

  • While the Frittata is baking blanch green beans in a large pot of well salted boiling water until bright green in colour and tender crisp, roughly 3 minutes.
  • Drain and shock in a bowl of ice water to stop from cooking.
  • Heat a heavy frying pan over medium heat, add oil and butter. Add garlic and red pepper flakes and sauté until fragrant, about 30 seconds.
  • Add the beans and continue to sauté until coated with the butter and heated through, about 5 min. Add lemon zest and salt and pepper.
  • Take your frittata out the oven and serve with green beans.
