Instructions
Preheat oven to 180°C.
Beat eggs with cold water.
Coarsely grate baby marrows. Sauté in some butter and season lightly.
Heat remaining butter and butter a shallow casserole dish. Place baby marrow and crumbled feta cheese into dish. Season with sea salt and milled black pepper.
Pour eggs over and bake for 15 minutes, or until light golden brown and just firm. Grill, if desired, to brown top lightly.
The Lemon Green Beans
While the Frittata is baking blanch green beans in a large pot of well salted boiling water until bright green in colour and tender crisp, roughly 3 minutes.
Drain and shock in a bowl of ice water to stop from cooking.
Heat a heavy frying pan over medium heat, add oil and butter. Add garlic and red pepper flakes and sauté until fragrant, about 30 seconds.
Add the beans and continue to sauté until coated with the butter and heated through, about 5 min. Add lemon zest and salt and pepper.
Take your frittata out the oven and serve with green beans.
